With the schools closing, it’s the ideal time for family members to try out some new skills and one of the best fun-packed ways to do this is with some yummy home baking.

With so many of us staying in and looking for ways to keep busy, now is the time to show loved ones and neighbours that we care. A great way is via some home baking and to help you, the Easy Peasy Campaign has provided a couple of recipes that are super simple, quick and require little equipment.

Why not try these Easy Peasy Chocolate Chunk Cookies or savoury individual Cheese Muffins with Sweetcorn & Spinach to show those you’re with how special they are – a perfect thoughtful homemade treat, especially in time for World Flour Day tomorrow!

The recipe is from the Easy Peasy Baking Campaign launched by nabim, The National Association of British and Irish Millers, to encourage the UK’s non-bakers to stick the oven on and get baking in 2020! A recent survey conducted by nabim found that 24% of non-bakers say that baking takes too much time, 22% don’t bake because of a lack of energy, and 19% find baking too difficult.

Cookies from the Easy Peasy Baking Campaign

Chocolate Chunk Cookies

Makes ten cookies

Ingredients

  • 300g plain flour
  • 1/2 tsp bicarbonate of soda
  • 120g salted butter (melted)
  • 225g light brown soft
  • One egg
  • Bar of milk chocolate, broken into squares

Equipment

  • Mixing bowl
  • Microwaveable bowl
  • Wooden Spoon
  • Lined baking tray
  • Measuring Spoons

Method

  1. Preheat your oven to 160°C.
  2. In the mixing bowl combine the two flours, bicarb and salt. Set to one side
  3. In the other bowl, melt the butter in the microwave and mix in both sugars before adding the egg. Add this wet mix to the dry flour mix and bring together with the wooden spoon to form a dough.
  4. Divide the dough into 60g balls and place on the lined baking tray, leaving room to spread between each one. Push each ball down slightly then place in the oven for 6 minutes.
  5. After the 6 minutes take the cookies out of the oven, press two squares of chocolate into each one, rotate the tray then bake for a further 6 minutes.
  6. Allow to cool slightly on the tray before serving.

Tip: You can keep the 60g dough balls in the freezer and when ready, bake for 12-14 minutes until golden brown, so you always have cookies on hand!

Easy Peasy savoury Cheese Muffins

Cheese Muffins with Sweetcorn & Spinach

Makes 12 muffins

Ingredients

  • 175g plain flour test with self-raising
  • 1 tsp bicarbonate of soda
  • 150g pre-grated cheese
  • 50g baby spinach, shredded
  • 100g tinned sweetcorn, drained
  • Two eggs
  • 150g unsalted butter, melted
  • 150ml/g milk

Equipment

  • Mixing bowl
  • Wooden spoon
  • Muffin tin
  • Muffin cases x 12
  • Measuring spoons

Method

  • Preheat the oven to 180°C.
  • Combine the flour, bicarbonate, cheese, spinach and sweetcorn in the mixing bowl.
  • Add the eggs, melted butter and milk and mix it all together.
  • Divide the batter evenly into the muffin cases.
  • Bake for 20-25 minutes until risen and golden. Serve warm.

Tip: Don’t have spinach or sweetcorn? Experiment with your favourite fillings – chopped red pepper or onions, or cubed ham makes for delicious alternatives. You can also add finely chopped chilli or chilli pepper flakes to add a spicy kick!
